Day 7 and 8 of 30 days till Something

First, I'd like to note that adding three drops of Peppermint oil to the Chocolate Chocolate Chip cookies is a very good plan.


Second, I'd like to note that adding a cup of shredded mozzarella cheese to the middle of a loaf of homemade bread is possibly the best idea I've had in twelve days.

 Here's the deal;

6-3-3-3-13 is what you need to know.


6 parts warm water, 3 parts salt, 3 parts sugar, 3 parts yeast, 13 parts flour
mix together in a bowl until well combined (don't use your hands. it's sticky.)

Cover it with a lid, or greased saran wrap, or aluminum foil, and let it rise in the bowl for about two hours. Put it in the fridge. When you want bread, pull off a piece of dough about the size of two fists, shape into a loaf (use flour. it's sticky.) Preheat your oven to 450 degrees. Cook for about 25 minutes.

See? You didn't make a giant flour explosion in your kitchen, hurt yourself kneading bread for an hour, or waste a lot of good ingredients on another so-so bread experiment. Happy. So Happy.

The dough will live in your fridge for about a week. Maybe it would be fine longer, but I've never made a batch and had it last longer than a week.

Tonight, I pushed the dough into a flat-ish oval, lined up a cup of shredded cheese, and sealed it up. There's none left. So it was a hit. I sprinkled some cheese on the top, but I shouldn't have. It got a little too brown. No one complained except me.

Then I made spaghetti.
